Description

A soft and fluffy garlic Parmesan focaccia bread topped with olive oil, minced garlic, herbs, and a golden layer of savory Parmesan cheese.

Ingredients

  • 3 1/2 cups all-purpose flour
  • 1 1/4 cups warm water
  • 2 1/4 teaspoons active dry yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/4 cup olive oil (plus more for drizzling)
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon dried Italian herbs or rosemary
  • 1/2 teaspoon flaky sea salt

Instructions

  1. In a bowl, dissolve yeast and sugar in warm water; let sit for 5 minutes until foamy.
  2. Add flour, salt, and olive oil, then mix until a sticky dough forms.
  3. Knead lightly or mix until smooth, then cover and let rise for 1 hour or until doubled.
  4. Preheat the oven to 220°C (425°F) and oil a baking pan.
  5. Transfer dough to the pan and gently press to spread, creating dimples with your fingers.
  6. Drizzle with olive oil and sprinkle garlic, herbs, Parmesan cheese, and flaky sea salt on top.
  7. Let rest for 15 minutes.
  8. Bake for 20–25 minutes until golden brown.
  9. Cool slightly before slicing and serving.

Notes

  • Do not overwork the dough to keep it light and airy.
  • Add mozzarella for a cheesier variation.
  • Best served warm or the same day.
