A comforting and flavorful crockpot recipe with tender chicken, creamy potatoes, and a rich garlic Parmesan sauce. Perfect for an easy, hands-off weeknight dinner.
Ingredients
- 2 lbs boneless, skinless chicken breasts or thighs
- 1 1/2 lbs baby potatoes, halved
- 1/2 cup grated Parmesan cheese
- 1 cup heavy cream
- 1/2 cup chicken broth
- 4 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Spray or lightly grease the inside of your crockpot with cooking spray.
- Place chicken breasts (or thighs) and halved baby potatoes into the crockpot.
- In a bowl, whisk together Parmesan cheese, heavy cream, chicken broth, garlic, Italian seasoning, paprika, salt, pepper, and olive oil.
- Pour the mixture evenly over the chicken and potatoes.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is tender and fully cooked, and potatoes are soft.
- Garnish with fresh parsley before serving.
- Serve hot with a side salad or crusty bread to soak up the creamy sauce.
Notes
- For extra richness, stir in 1/2 cup cream cheese at the end of cooking.
- Thighs stay juicier than chicken breasts in the crockpot.
- Use red or Yukon gold potatoes for the best texture.
