Description

A comforting and flavorful crockpot recipe with tender chicken, creamy potatoes, and a rich garlic Parmesan sauce. Perfect for an easy, hands-off weeknight dinner.


Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 1/2 lbs baby potatoes, halved
  • 1/2 cup grated Parmesan cheese
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 4 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 2 tbsp fresh parsley, chopped (for garnish)


Instructions

  1. Spray or lightly grease the inside of your crockpot with cooking spray.
  2. Place chicken breasts (or thighs) and halved baby potatoes into the crockpot.
  3. In a bowl, whisk together Parmesan cheese, heavy cream, chicken broth, garlic, Italian seasoning, paprika, salt, pepper, and olive oil.
  4. Pour the mixture evenly over the chicken and potatoes.
  5. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is tender and fully cooked, and potatoes are soft.
  6. Garnish with fresh parsley before serving.
  7. Serve hot with a side salad or crusty bread to soak up the creamy sauce.

  • For extra richness, stir in 1/2 cup cream cheese at the end of cooking.
  • Thighs stay juicier than chicken breasts in the crockpot.
  • Use red or Yukon gold potatoes for the best texture.
