Ingredients
- 12 oz elbow macaroni
- 3 tablespoons unsalted butter
- 2 large yellow onions, thinly sliced
- 1 teaspoon sugar
- 2 cloves garlic, minced
- 3 tablespoons all-purpose flour
- 2 cups milk
- 1 cup vegetable broth
- 1 1/2 cups shredded Gruyère cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1/2 cup toasted breadcrumbs (optional)
Instructions
- Cook macaroni according to package directions until al dente; drain and set aside.
- In a large skillet, melt butter over medium heat.
- Add sliced onions and sugar, cooking slowly for 20–25 minutes until deeply caramelized.
- Add garlic and cook for 30 seconds until fragrant.
- Stir in flour and cook for 1 minute.
- Gradually whisk in milk and vegetable broth; cook until the sauce thickens.
- Reduce heat and stir in Gruyère, mozzarella, and Parmesan until melted.
- Season with salt, pepper, and thyme.
- Add cooked macaroni and stir until well coated.
- Transfer to a baking dish, top with breadcrumbs if using, and broil for 2–3 minutes until golden.
- Serve hot.
