Ingredients

  • 1 lb (450 g) beef sirloin or stew beef, thinly sliced
  • 4 large onions, thinly sliced
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 4 cups beef broth
  • 1/2 cup water
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 4 slices baguette, toasted
  • 1 cup shredded Gruyère or mozzarella cheese


Instructions

  1. Heat butter and olive oil in a large pot over medium heat.
  2. Add sliced onions, sugar, salt, and pepper, and cook slowly for 20–25 minutes, stirring often, until deeply caramelized.
  3. Add sliced beef to the pot and cook for 3–4 minutes until lightly browned.
  4. Pour in beef broth and water, then add thyme and bay leaf.
  5. Bring to a gentle boil, then reduce heat and simmer for 20 minutes.
  6. Remove bay leaf and taste for seasoning.
  7. Ladle soup into oven-safe bowls, top with toasted baguette slices and shredded cheese.
  8. Broil for 2–3 minutes until cheese is melted and bubbly.
  9. Serve hot.
