Description

Ingredients
- 1 lb (450 g) beef sirloin or stew beef, thinly sliced
- 4 large onions, thinly sliced
- 3 tablespoons unsalted butter
- 1 tablespoon olive oil
- 4 cups beef broth
- 1/2 cup water
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 bay leaf
- 4 slices baguette, toasted
- 1 cup shredded Gruyère or mozzarella cheese
Instructions
- Heat butter and olive oil in a large pot over medium heat.
- Add sliced onions, sugar, salt, and pepper, and cook slowly for 20–25 minutes, stirring often, until deeply caramelized.
- Add sliced beef to the pot and cook for 3–4 minutes until lightly browned.
- Pour in beef broth and water, then add thyme and bay leaf.
- Bring to a gentle boil, then reduce heat and simmer for 20 minutes.
- Remove bay leaf and taste for seasoning.
- Ladle soup into oven-safe bowls, top with toasted baguette slices and shredded cheese.
- Broil for 2–3 minutes until cheese is melted and bubbly.
- Serve hot.
