Description
This family favorite chicken quesadilla recipe is quick, cheesy, and packed with flavor. Perfect for lunch, dinner, or a kid-friendly meal, these quesadillas are crispy on the outside with a gooey chicken and cheese filling.
Ingredients
- 2 cups cooked chicken, shredded
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup bell peppers, diced
- 1/2 cup onion, diced
- 1 tbsp olive oil
- 1/2 tsp chili powder
- 1/2 tsp cumin
- Salt and pepper, to taste
- 4 large flour tortillas
- 2 tbsp butter
- Sour cream, salsa, or guacamole (for serving)
Instructions
- Heat olive oil in a skillet over medium heat. Sauté onions and bell peppers until softened, about 3–4 minutes.
- Add shredded chicken, chili powder, cumin, salt, and pepper. Stir until heated through and well combined. Remove from heat.
- Lay a tortilla flat and sprinkle a layer of cheddar and Monterey Jack cheese over half of it.
- Spoon chicken mixture over the cheese, then top with more cheese. Fold tortilla in half.
- In a large skillet, melt a little butter over medium heat. Cook quesadilla 2–3 minutes per side, until tortilla is golden and cheese is melted.
- Repeat with remaining tortillas and filling.
- Slice quesadillas into wedges and serve with sour cream, salsa, or guacamole.
Notes
- Use rotisserie chicken for extra convenience.
- Add jalapeños for a spicy kick.
- Can also be baked at 400°F for 10 minutes for a less greasy option.
