Description

This family favorite chicken quesadilla recipe is quick, cheesy, and packed with flavor. Perfect for lunch, dinner, or a kid-friendly meal, these quesadillas are crispy on the outside with a gooey chicken and cheese filling.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup bell peppers, diced
  • 1/2 cup onion, diced
  • 1 tbsp olive oil
  • 1/2 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper, to taste
  • 4 large flour tortillas
  • 2 tbsp butter
  • Sour cream, salsa, or guacamole (for serving)


Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté onions and bell peppers until softened, about 3–4 minutes.
  2. Add shredded chicken, chili powder, cumin, salt, and pepper. Stir until heated through and well combined. Remove from heat.
  3. Lay a tortilla flat and sprinkle a layer of cheddar and Monterey Jack cheese over half of it.
  4. Spoon chicken mixture over the cheese, then top with more cheese. Fold tortilla in half.
  5. In a large skillet, melt a little butter over medium heat. Cook quesadilla 2–3 minutes per side, until tortilla is golden and cheese is melted.
  6. Repeat with remaining tortillas and filling.
  7. Slice quesadillas into wedges and serve with sour cream, salsa, or guacamole.

Notes

  • Use rotisserie chicken for extra convenience.
  • Add jalapeños for a spicy kick.
  • Can also be baked at 400°F for 10 minutes for a less greasy option.
