A bold and flavorful chicken dish cooked in a zesty cowboy butter sauce made with garlic, lemon, Dijon mustard, herbs, and spices. Perfect for weeknight dinners or grilling nights.
Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1/2 cup unsalted butter, melted
- 4 cloves garlic, minced
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon red pepper flakes
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh chives, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Season chicken breasts with salt and black pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken breasts for 5-6 minutes per side until golden brown and cooked through (internal temperature 165°F / 74°C). Remove from skillet and set aside.
- In the same skillet, reduce heat to medium and add melted butter, garlic, Dijon mustard, lemon juice, lemon zest, smoked paprika, cayenne, and red pepper flakes. Stir until fragrant and combined.
- Return chicken to the skillet and spoon cowboy butter sauce over the top.
- Sprinkle with fresh parsley and chives before serving.
Notes
- Can be served with rice, roasted vegetables, or crusty bread to soak up the sauce.
- For a smoky flavor, grill the chicken instead of pan-searing.
