Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1/2 cup unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon red pepper flakes
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. Season chicken breasts with salt and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken breasts for 5-6 minutes per side until golden brown and cooked through (internal temperature 165°F / 74°C). Remove from skillet and set aside.
  3. In the same skillet, reduce heat to medium and add melted butter, garlic, Dijon mustard, lemon juice, lemon zest, smoked paprika, cayenne, and red pepper flakes. Stir until fragrant and combined.
  4. Return chicken to the skillet and spoon cowboy butter sauce over the top.
  5. Sprinkle with fresh parsley and chives before serving.
