Ingredients
- 2 lbs boneless, skinless chicken breasts (about 4 pieces)
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 cup grated Parmesan cheese
- 4 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes (optional)
- Salt and black pepper to taste
- 2 tbsp cornstarch + 2 tbsp water (optional, for thickening)
- Fresh basil or parsley, for garnish
Instructions
- Place chicken breasts in a slow cooker or large oven-safe baking dish.
- Add chicken broth, heavy cream, sun-dried tomatoes, Parmesan cheese, garlic, Italian seasoning, red pepper flakes, salt, and pepper.
- Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours in the slow cooker (or bake at 375°F for 40–45 minutes if using oven method).
- If sauce is too thin, mix cornstarch with water and stir into sauce. Cook an additional 10 minutes until thickened.
- Garnish with fresh basil or parsley before serving.
- Serve over pasta, rice, or mashed potatoes.

- Chicken thighs can be used instead of chicken breasts for extra juiciness.
- Adjust red pepper flakes depending on spice preference.
