Ingredients

  • 2 lbs boneless, skinless chicken breasts (about 4 pieces)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes (optional)
  • Salt and black pepper to taste
  • 2 tbsp cornstarch + 2 tbsp water (optional, for thickening)
  • Fresh basil or parsley, for garnish


Instructions

  1. Place chicken breasts in a slow cooker or large oven-safe baking dish.
  2. Add chicken broth, heavy cream, sun-dried tomatoes, Parmesan cheese, garlic, Italian seasoning, red pepper flakes, salt, and pepper.
  3. Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours in the slow cooker (or bake at 375°F for 40–45 minutes if using oven method).
  4. If sauce is too thin, mix cornstarch with water and stir into sauce. Cook an additional 10 minutes until thickened.
  5. Garnish with fresh basil or parsley before serving.
  6. Serve over pasta, rice, or mashed potatoes.
