Description

Crispy, tangy chicken bites marinated in dill pickle juice and coated in a Parmesan-seasoned crust—an easy, flavorful appetizer or main dish.

Ingredients

  • 1 1/2 lbs chicken breasts, cut into bite-sized pieces
  • 1 cup dill pickle juice (for marinating)
  • 1 cup grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 1/2 tsp dried dill
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 large eggs, beaten
  • Cooking spray or oil (for baking or air frying)

Instructions

  1. Place chicken pieces in a bowl and pour dill pickle juice over them. Marinate for 30 minutes to 2 hours in the refrigerator.
  2. Preheat oven to 400°F (205°C) or preheat air fryer to 390°F (200°C).
  3. In a shallow bowl, mix Parmesan, panko, garlic powder, onion powder, paprika, dried dill, salt, and pepper.
  4. Drain chicken and pat lightly dry. Dip each piece into the beaten eggs, then coat in the Parmesan mixture.
  5. Arrange coated chicken bites onto a greased baking sheet or air fryer basket.
  6. Bake for 18–22 minutes (or air fry for 10–12 minutes), turning halfway, until golden and cooked through.
  7. Serve warm with ranch, dill sauce, or your favorite dipping sauce.

Notes

  • For extra crunch, lightly spray the tops of the chicken bites with oil before cooking.
  • Use finely grated Parmesan for best coating adherence.
  • Try spicy dill pickle juice for a zesty twist.
