Ingredients
- 1 1/2 lbs chicken breasts, cut into bite-sized pieces
- 1 cup dill pickle juice (for marinating)
- 1 cup grated Parmesan cheese
- 1 cup panko breadcrumbs
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika
- 1/2 tsp dried dill
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 large eggs, beaten
- Cooking spray or oil (for baking or air frying)
Instructions
- Place chicken pieces in a bowl and pour dill pickle juice over them. Marinate for 30 minutes to 2 hours in the refrigerator.

- In a shallow bowl, mix Parmesan, panko, garlic powder, onion powder, paprika, dried dill, salt, and pepper.
- Drain chicken and pat lightly dry. Dip each piece into the beaten eggs, then coat in the Parmesan mixture.
- Arrange coated chicken bites onto a greased baking sheet or air fryer basket.
- Bake for 18–22 minutes (or air fry for 10–12 minutes), turning halfway, until golden and cooked through.
- Serve warm with ranch, dill sauce, or your favorite dipping sauce.
Notes
- For extra crunch, lightly spray the tops of the chicken bites with oil before cooking.
- Use finely grated Parmesan for best coating adherence.
- Try spicy dill pickle juice for a zesty twist.
