Description

A light and flavorful crustless quiche made with spinach, feta cheese, and eggs. Perfect for breakfast, brunch, or a healthy low-carb meal.


Ingredients

  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 5 oz fresh spinach (about 5 cups), chopped
  • 6 large eggs
  • 1 cup milk (or half-and-half for creamier texture)
  • 1/2 cup crumbled feta cheese
  • 1/2 cup shredded mozzarella or Swiss cheese
  • 1/4 tsp nutmeg (optional)
  • Salt and black pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9-inch pie dish or baking dish.
  2. Heat olive oil in a skillet over medium heat. Add onion and garlic, and sauté until softened.
  3. Add spinach and cook until wilted. Remove from heat and let cool slightly.
  4. In a large bowl, whisk together eggs, milk, nutmeg, salt, and pepper.
  5. Stir in cooked spinach mixture, feta, and mozzarella cheese.
  6. Pour mixture into prepared dish and spread evenly.
  7. Bake for 35–40 minutes, or until the center is set and the top is lightly golden.
  8. Let cool for 5–10 minutes before slicing and serving.

Notes

  • Frozen spinach can be used instead of fresh—just thaw and squeeze out excess water.
  • Can be served warm or at room temperature.
  • Store leftovers in the refrigerator for up to 3 days.
