Description
A light and flavorful crustless quiche made with spinach, feta cheese, and eggs. Perfect for breakfast, brunch, or a healthy low-carb meal.
Ingredients
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 5 oz fresh spinach (about 5 cups), chopped
- 6 large eggs
- 1 cup milk (or half-and-half for creamier texture)
- 1/2 cup crumbled feta cheese
- 1/2 cup shredded mozzarella or Swiss cheese
- 1/4 tsp nutmeg (optional)
- Salt and black pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Grease a 9-inch pie dish or baking dish.
- Heat olive oil in a skillet over medium heat. Add onion and garlic, and sauté until softened.
- Add spinach and cook until wilted. Remove from heat and let cool slightly.
- In a large bowl, whisk together eggs, milk, nutmeg, salt, and pepper.
- Stir in cooked spinach mixture, feta, and mozzarella cheese.
- Pour mixture into prepared dish and spread evenly.
- Bake for 35–40 minutes, or until the center is set and the top is lightly golden.
- Let cool for 5–10 minutes before slicing and serving.
Notes
- Frozen spinach can be used instead of fresh—just thaw and squeeze out excess water.
- Can be served warm or at room temperature.
- Store leftovers in the refrigerator for up to 3 days.
