Description

Creamy Tuscan chicken pasta is a rich and comforting dish made with tender chicken, sun-dried tomatoes, spinach, and pasta tossed in a creamy garlic Parmesan sauce.


Ingredients

  • 12 oz pasta (penne or fettuccine)
  • 1 pound boneless skinless chicken breasts, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, sliced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 3/4 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1/2 teaspoon red pepper flakes (optional)


Instructions

  1. Cook pasta according to package instructions until al dente; drain and set aside.
  2. Season chicken with salt, pepper, and Italian seasoning.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Cook chicken for 4–5 minutes per side until golden and cooked through; remove and set aside.
  5. In the same skillet, add garlic and sauté for 30 seconds until fragrant.
  6. Add sun-dried tomatoes and cook for 1 minute.
  7. Pour in chicken broth and heavy cream; bring to a gentle simmer.
  8. Stir in Parmesan cheese until melted and smooth.
  9. Add spinach and cook until wilted.
  10. Return chicken and add cooked pasta to the skillet.
  11. Toss everything together until well coated.
  12. Sprinkle with red pepper flakes if using and serve hot.

Notes

  • Use freshly grated Parmesan for best flavor.
  • Chicken thighs can be substituted for extra juiciness.
  • Add mushrooms for more texture.
