Creamy smothered chicken is a comforting, flavorful dish featuring tender pan-seared chicken breasts smothered in a rich, creamy gravy made with onions, garlic, and seasoning. Perfect for a cozy weeknight meal.
Ingredients
- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 1 medium onion, thinly sliced
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tsp paprika
- 1/2 tsp dried thyme
- Salt and pepper, to taste
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Season chicken breasts on both sides with salt, pepper, and paprika.
- Heat olive oil in a large skillet over medium-high heat. Cook chicken until golden brown on both sides and cooked through, about 6–7 minutes per side. Remove from skillet and set aside.
- In the same skillet, melt butter and sauté onions until softened and golden, about 5 minutes. Add garlic and cook for 1 minute more.
- Pour in chicken broth, scraping up browned bits from the pan. Stir in heavy cream, Parmesan, and thyme. Simmer until sauce thickens, about 5 minutes.
- Return chicken to the skillet, spoon sauce over the top, and simmer for 3–4 minutes until heated through.
- Garnish with fresh parsley and serve warm.
Notes
- Serve with mashed potatoes, rice, or pasta to soak up the sauce.
- For lighter sauce, substitute half-and-half for heavy cream.
- Add mushrooms for extra flavor and heartiness.
