Description

Creamy smothered chicken is a comforting, flavorful dish featuring tender pan-seared chicken breasts smothered in a rich, creamy gravy made with onions, garlic, and seasoning. Perfect for a cozy weeknight meal.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 medium onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tsp paprika
  • 1/2 tsp dried thyme
  • Salt and pepper, to taste
  • 2 tbsp fresh parsley, chopped (for garnish)


Instructions

  1. Season chicken breasts on both sides with salt, pepper, and paprika.
  2. Heat olive oil in a large skillet over medium-high heat. Cook chicken until golden brown on both sides and cooked through, about 6–7 minutes per side. Remove from skillet and set aside.
  3. In the same skillet, melt butter and sauté onions until softened and golden, about 5 minutes. Add garlic and cook for 1 minute more.
  4. Pour in chicken broth, scraping up browned bits from the pan. Stir in heavy cream, Parmesan, and thyme. Simmer until sauce thickens, about 5 minutes.
  5. Return chicken to the skillet, spoon sauce over the top, and simmer for 3–4 minutes until heated through.
  6. Garnish with fresh parsley and serve warm.

Notes

  • Serve with mashed potatoes, rice, or pasta to soak up the sauce.
  • For lighter sauce, substitute half-and-half for heavy cream.
