Ingredients
- 4 boneless, skinless chicken breasts (or thighs)
- 2 tbsp olive oil
- 1 tbsp butter
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup sour cream
- 1/2 cup grated Parmesan cheese
- 1 tsp paprika
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp black pepper
- 1/2 tsp salt
- 2 tbsp fresh parsley, chopped (for garnish)
- 4 cups cooked rice (white, brown, or jasmine)
Instructions
- Season chicken with paprika, garlic powder, onion powder, salt, and pepper.
- Heat olive oil and butter in a large skillet over medium-high heat. Cook chicken until golden brown on both sides and cooked through, about 6–7 minutes per side. Remove and set aside.
- In the same skillet, sauté onion and garlic until fragrant and softened, about 3 minutes.
- Stir in chicken broth and bring to a simmer, scraping up any browned bits from the bottom.
- Lower heat and add heavy cream, sour cream, and Parmesan cheese. Stir until sauce is smooth and creamy.
- Return chicken to skillet and spoon sauce over the top. Simmer for 5 minutes to allow flavors to blend.
- Serve chicken smothered with sauce over a bed of warm rice. Garnish with fresh parsley.
