Description

Creamy Garlic Butter Tuscan Chicken is a rich and flavorful dish featuring tender chicken breasts simmered in a creamy garlic parmesan sauce with sun-dried tomatoes and spinach. Perfect for an indulgent weeknight dinner that feels restaurant-quality.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup sun-dried tomatoes, sliced
  • 2 cups baby spinach
  • Salt and black pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a large skillet, heat olive oil over medium-high heat. Sear the chicken for 5–6 minutes per side until golden brown and cooked through. Remove and set aside.
  3. In the same skillet, melt the butter and sauté minced garlic for 30 seconds until fragrant.
  4. Pour in the chicken broth and heavy cream, then stir in Parmesan cheese, Italian seasoning, and red pepper flakes. Simmer for 2–3 minutes until slightly thickened.
  5. Add the sun-dried tomatoes and spinach to the sauce. Cook until the spinach wilts.
  6. Return the chicken to the pan and spoon the creamy sauce over it. Simmer for another 2–3 minutes to heat through.
  7. Garnish with chopped parsley and serve warm over pasta, rice, or mashed potatoes.

Notes

  • For a lighter version, substitute half-and-half or coconut milk for the heavy cream.
  • You can use boneless chicken thighs instead of breasts for extra juiciness.
  • Serve with zucchini noodles or cauliflower mash for a low-carb option.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
