Ingredients
- 200 g dark chocolate, chopped
- 3 tbsp brewed strong coffee or espresso
- 3 large eggs, separated
- 1/4 cup granulated sugar
- 1 cup heavy cream, chilled
- 1 tsp vanilla extract
- Pinch of salt

- In another bowl, whip the heavy cream with vanilla extract until soft peaks form.
- Gently fold the whipped cream into the chocolate mixture, followed by the beaten egg whites, folding carefully to maintain the airy texture.
- Spoon mousse into serving glasses and refrigerate for at least 2 hours or until set.
- Top with whipped cream and chocolate shavings before serving.
Notes
- Use high-quality dark chocolate for the best flavor.
- Ensure the chocolate mixture is not too hot before adding egg yolks, to prevent curdling.
- For a boozy twist, add a splash of coffee liqueur such as Kahlúa.
- This mousse contains raw eggs—use pasteurized eggs if concerned about food safety.
