Ingredients
- 6 bone-in, skin-on chicken thighs
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp onion powder
- 1/2 tsp dried thyme (or Italian seasoning)
- 1 tbsp butter (optional, for finishing)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C) if baking, or heat a large skillet over medium-high heat for pan-searing.
- Pat chicken thighs dry with paper towels to ensure crispy skin.
- In a small bowl, mix salt, pepper, garlic powder, paprika, onion powder, and thyme.
- Rub olive oil and the seasoning mix evenly over the chicken thighs.
- For Oven-Baked: Place chicken thighs on a baking tray lined with foil or parchment paper. Bake for 35–40 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is crispy.
- For Pan-Seared: Heat olive oil in a skillet. Place chicken thighs skin side down and cook for 6–8 minutes until golden brown. Flip and cook another 6–8 minutes, or until fully cooked. Add butter in the last minute for extra flavor.
- Remove from heat and let rest for 5 minutes before serving.
- Garnish with fresh parsley and serve warm.
