Description

The Chicken Avocado Melt Sandwich is a warm, cheesy, and satisfying sandwich made with tender grilled chicken, creamy avocado, melted cheese, and toasted bread. It’s the perfect balance of freshness and comfort, ideal for lunch or a quick dinner.


Ingredients

  • 2 cups cooked chicken breast, shredded or sliced
  • 1 ripe avocado, sliced or mashed
  • 4 slices of bread (sourdough, ciabatta, or whole grain)
  • 4 slices mozzarella or provolone cheese
  • 2 tbsp mayonnaise (optional)
  • 1 tbsp butter (for grilling)
  • 1/4 tsp garlic powder
  • Salt and black pepper, to taste
  • 1 tsp lemon juice (to keep avocado fresh)
  • Fresh spinach or lettuce leaves (optional)


Instructions

  1. In a small bowl, mash avocado with lemon juice, salt, and pepper. Set aside.
  2. Lay out the bread slices. Spread mayonnaise on one side (optional) and avocado spread on the other.
  3. Layer cooked chicken on top of the avocado side, then add cheese slices. Add spinach or lettuce if desired.
  4. Top with the second slice of bread to form a sandwich.
  5. Heat a non-stick skillet or griddle over medium heat. Melt a little butter and sprinkle garlic powder on it.
  6. Place the sandwich in the skillet and cook for 2–3 minutes per side, pressing gently with a spatula, until the bread is golden and the cheese is melted.
  7. Remove from pan, slice in half, and serve warm.
