Description
The Chicken Avocado Melt Sandwich is a warm, cheesy, and satisfying sandwich made with tender grilled chicken, creamy avocado, melted cheese, and toasted bread. It’s the perfect balance of freshness and comfort, ideal for lunch or a quick dinner.
Ingredients
- 2 cups cooked chicken breast, shredded or sliced
- 1 ripe avocado, sliced or mashed
- 4 slices of bread (sourdough, ciabatta, or whole grain)
- 4 slices mozzarella or provolone cheese
- 2 tbsp mayonnaise (optional)
- 1 tbsp butter (for grilling)
- 1/4 tsp garlic powder
- Salt and black pepper, to taste
- 1 tsp lemon juice (to keep avocado fresh)
- Fresh spinach or lettuce leaves (optional)
Instructions
- In a small bowl, mash avocado with lemon juice, salt, and pepper. Set aside.
- Lay out the bread slices. Spread mayonnaise on one side (optional) and avocado spread on the other.
- Layer cooked chicken on top of the avocado side, then add cheese slices. Add spinach or lettuce if desired.
- Top with the second slice of bread to form a sandwich.
- Heat a non-stick skillet or griddle over medium heat. Melt a little butter and sprinkle garlic powder on it.
- Place the sandwich in the skillet and cook for 2–3 minutes per side, pressing gently with a spatula, until the bread is golden and the cheese is melted.
- Remove from pan, slice in half, and serve warm.

- Use rotisserie chicken for quick preparation.
- Try Swiss, cheddar, or pepper jack for different cheese flavors.
- Add tomato slices or caramelized onions for an extra flavor boost.
- For a healthier version, use whole-grain bread and light cheese.
