Ingredients

  • 1 1/2 pounds sirloin or ribeye steak
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1/3 cup sliced jalapeños (fresh or pickled)
  • 2 tablespoons butter
  • Fresh parsley or green onions for garnish (optional)


Instructions

  1. Remove steak from the refrigerator 20 minutes before cooking.
  2. Season steak on both sides with salt, pepper, garlic powder, and smoked paprika.
  3. Heat olive oil in a skillet or grill pan over high heat.
  4. Sear steak for 3–4 minutes per side (or to desired doneness).
  5. Reduce heat to medium and add butter to the pan.
  6. Spoon melted butter over steak for 1 minute.
  7. Top steak with shredded cheese and jalapeños.
  8. Cover pan briefly until cheese melts.
  9. Remove from heat and rest steak for 5 minutes.
  10. Garnish and serve hot.
