Description

Soft, fluffy buns filled with spicy dynamite chicken and gooey melted cheese, baked until golden brown. A delicious snack or appetizer with a kick of flavor.

Ingredients

  • 3 cups all-purpose flour
  • 2 1/4 tsp active dry yeast (1 packet)
  • 3/4 cup warm milk (110°F/45°C)
  • 2 tbsp sugar
  • 1 tsp salt
  • 1 large egg
  • 3 tbsp unsalted butter, softened
  • 2 tbsp olive oil
  • 1 lb boneless, skinless chicken breast, cut into small cubes
  • 2 tbsp hot sauce or sriracha
  • 2 tbsp mayonnaise
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • 1 cup shredded mozzarella cheese
  • 1 egg yolk + 1 tbsp milk (for egg wash)
  • Sesame seeds (optional, for topping)

Instructions

  1. In a bowl, dissolve yeast in warm milk with sugar. Let sit for 5–10 minutes until foamy.
  2. Add flour, salt, egg, butter, and olive oil. Mix and knead until a smooth dough forms. Cover and let rise for 1–2 hours until doubled in size.
  3. Meanwhile, season chicken with paprika, garlic powder, black pepper, hot sauce, and mayonnaise. Cook in a skillet over medium heat until chicken is fully cooked. Let cool slightly.
  4. Punch down dough and divide into 10–12 equal pieces. Flatten each piece and fill with chicken mixture and mozzarella cheese. Seal well and shape into balls.
  5. Place buns on a baking sheet lined with parchment paper. Cover and let rise again for 30 minutes.
  6. Brush tops with egg wash and sprinkle with sesame seeds if desired.
  7. Bake at 375°F (190°C) for 20–25 minutes, until golden brown.
  8. Serve warm and enjoy the cheesy, spicy filling!

Notes

  • Adjust spice level by adding more or less hot sauce.
  • You can prepare the buns ahead and freeze them before baking.
  • Swap mozzarella with cheddar or gouda for different flavors.
  • Great for parties, picnics, or meal prep snacks.
