Description

Ingredients

  • 4 large flour tortillas
  • 1 1/2 cups shredded cheddar cheese (or a mix of cheddar and mozzarella)
  • 6 slices bacon, cooked and crumbled
  • 2 tbsp ranch dressing (plus more for dipping)
  • 1/4 cup chopped green onions
  • 1 tbsp butter or olive oil (for cooking)
  • Optional: 1/4 cup cooked shredded chicken for extra protein


Instructions

  1. Prepare the filling: In a medium bowl, combine shredded cheese, crumbled bacon, green onions, and ranch dressing. Mix until evenly coated.
  2. Assemble the quesadillas: Lay out 2 tortillas. Spread the cheese-bacon mixture evenly over each, leaving about 1/2 inch around the edges. Top with the remaining tortillas to make a sandwich.
  3. Cook: Heat a skillet or griddle over medium heat and brush lightly with butter or oil. Cook each quesadilla for 2–3 minutes per side, until golden brown and cheese is melted.
  4. Slice and serve: Remove from heat, let rest for 1 minute, then cut into wedges. Serve warm with extra ranch dressing or salsa for dipping.

Notes

  • For extra flavor, sprinkle a little garlic powder or crushed red pepper into the filling.
  • Make it heartier by adding cooked chicken or ham.
  • To make it crispier, brush the outside of the tortillas with butter before cooking.
  • These reheat beautifully in the air fryer at 350°F (175°C) for 3 minutes per side.
