Ingredients
- 4 large flour tortillas
- 1 1/2 cups shredded cheddar cheese (or a mix of cheddar and mozzarella)
- 6 slices bacon, cooked and crumbled
- 2 tbsp ranch dressing (plus more for dipping)
- 1/4 cup chopped green onions
- 1 tbsp butter or olive oil (for cooking)
- Optional: 1/4 cup cooked shredded chicken for extra protein
Instructions
- Prepare the filling: In a medium bowl, combine shredded cheese, crumbled bacon, green onions, and ranch dressing. Mix until evenly coated.
- Assemble the quesadillas: Lay out 2 tortillas. Spread the cheese-bacon mixture evenly over each, leaving about 1/2 inch around the edges. Top with the remaining tortillas to make a sandwich.
- Cook: Heat a skillet or griddle over medium heat and brush lightly with butter or oil. Cook each quesadilla for 2–3 minutes per side, until golden brown and cheese is melted.
- Slice and serve: Remove from heat, let rest for 1 minute, then cut into wedges. Serve warm with extra ranch dressing or salsa for dipping.
Notes
- For extra flavor, sprinkle a little garlic powder or crushed red pepper into the filling.
- Make it heartier by adding cooked chicken or ham.
- To make it crispier, brush the outside of the tortillas with butter before cooking.
