Description
A creamy and flavorful potato salad loaded with cheddar cheese, crispy bacon, and ranch dressing. A crowd-pleasing side dish for barbecues, picnics, or family dinners.
Ingredients
- 3 lbs russet or red potatoes, peeled and cubed
- 1 cup ranch dressing
- 1/2 cup mayonnaise
- 1 1/2 cups shredded cheddar cheese
- 8 slices bacon, cooked and crumbled
- 1/2 cup green onions, chopped
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt (adjust to taste)
Instructions
- Place cubed potatoes in a large pot, cover with water, and bring to a boil. Cook for 10-12 minutes, or until fork tender. Drain and let cool slightly.
- In a large bowl, combine ranch dressing, mayonnaise, garlic powder, salt, and pepper.
- Add potatoes to the dressing mixture and gently toss until coated.
- Fold in cheddar cheese, crumbled bacon, and green onions.
- Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.
Notes
- For added flavor, use sharp cheddar cheese.
- You can substitute sour cream for mayonnaise for a tangier taste.
- Best served chilled, but can be enjoyed warm as well.
