Description

A creamy and flavorful potato salad loaded with cheddar cheese, crispy bacon, and ranch dressing. A crowd-pleasing side dish for barbecues, picnics, or family dinners.


Ingredients

  • 3 lbs russet or red potatoes, peeled and cubed
  • 1 cup ranch dressing
  • 1/2 cup mayonnaise
  • 1 1/2 cups shredded cheddar cheese
  • 8 slices bacon, cooked and crumbled
  • 1/2 cup green onions, chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt (adjust to taste)


Instructions

  1. Place cubed potatoes in a large pot, cover with water, and bring to a boil. Cook for 10-12 minutes, or until fork tender. Drain and let cool slightly.
  2. In a large bowl, combine ranch dressing, mayonnaise, garlic powder, salt, and pepper.
  3. Add potatoes to the dressing mixture and gently toss until coated.
  4. Fold in cheddar cheese, crumbled bacon, and green onions.
  5. Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.

  • For added flavor, use sharp cheddar cheese.
