Ingredients
- 8 oz spaghetti (or linguine)
- 2 tbsp olive oil
- 2 chicken breasts, cut into thin strips
- 1 tbsp Cajun seasoning (plus more to taste)
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- Salt and pepper to taste
- 1 tbsp butter
- 2 tbsp chopped parsley (for garnish)
Instructions
- Cook spaghetti according to package directions until al dente. Drain and set aside.
- Season chicken strips with Cajun seasoning, paprika, and garlic powder.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5–6 minutes until browned and cooked through. Remove and set aside.
- In the same skillet, melt butter and add bell peppers. Sauté for 3–4 minutes until slightly tender. Add minced garlic and cook another 30 seconds until fragrant.
- Pour in chicken broth and heavy cream, stirring to combine. Reduce heat to medium and simmer for 3–4 minutes until slightly thickened.
- Stir in Parmesan and mozzarella cheese until melted and smooth. Season with salt and pepper to taste.
- Add cooked spaghetti and chicken back to the skillet. Toss to coat evenly in the creamy Cajun sauce.
- Simmer for 1–2 minutes to let the flavors blend. Garnish with chopped parsley and serve hot.
Notes
- For extra heat, add a pinch of cayenne pepper or a dash of hot sauce to the sauce.
- Use penne or fettuccine if you prefer a different pasta shape.
- Substitute half-and-half for heavy cream for a lighter version.
