Bold & Creamy Cajun Chicken Spaghetti is a flavor-packed pasta dish featuring juicy Cajun-seasoned chicken tossed in a luxuriously creamy sauce infused with garlic, bell peppers, and bold Cajun spices. It’s rich, spicy, and irresistibly comforting — perfect for weeknight dinners or entertaining guests.


Ingredients

  • 8 oz spaghetti (or linguine)
  • 2 tbsp olive oil
  • 2 chicken breasts, cut into thin strips
  • 1 tbsp Cajun seasoning (plus more to taste)
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • 1 tbsp butter
  • 2 tbsp chopped parsley (for garnish)


Instructions

  1. Cook spaghetti according to package directions until al dente. Drain and set aside.
  2. Season chicken strips with Cajun seasoning, paprika, and garlic powder.
  3. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5–6 minutes until browned and cooked through. Remove and set aside.
  4. In the same skillet, melt butter and add bell peppers. Sauté for 3–4 minutes until slightly tender. Add minced garlic and cook another 30 seconds until fragrant.
  5. Pour in chicken broth and heavy cream, stirring to combine. Reduce heat to medium and simmer for 3–4 minutes until slightly thickened.
  6. Stir in Parmesan and mozzarella cheese until melted and smooth. Season with salt and pepper to taste.
  7. Add cooked spaghetti and chicken back to the skillet. Toss to coat evenly in the creamy Cajun sauce.
  8. Simmer for 1–2 minutes to let the flavors blend. Garnish with chopped parsley and serve hot.

Notes

  • For extra heat, add a pinch of cayenne pepper or a dash of hot sauce to the sauce.
  • Use penne or fettuccine if you prefer a different pasta shape.
  • Substitute half-and-half for heavy cream for a lighter version.
