Ingredients

Instructions

  1. Preheat oven to 325°F (160°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. Make the Crust: Combine chocolate cookie crumbs and melted butter in a bowl. Press the mixture firmly into the bottom of the pan. Bake for 10 minutes, then let cool.
  3. Make the Filling: In a large bowl, beat cream cheese and sugar together until smooth and creamy. Add sour cream, vanilla extract, and melted chocolate. Mix until fully combined.
  4. Add eggs one at a time, mixing on low speed after each addition just until combined (do not overmix).

  6. Place the pan in a larger baking dish and fill with 1 inch of hot water (water bath) to prevent cracking.

  8. Remove from oven and refrigerate for at least 4 hours or overnight.
