Ingredients
- 8 oz elbow macaroni (or any pasta of choice)
- 2 cups cooked chicken, shredded or chopped
- 1/2 cup BBQ sauce (plus extra for drizzling)
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 2 cups milk
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 1/2 cup mozzarella cheese
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup breadcrumbs (optional for topping)
- 1 tbsp chopped parsley (for garnish)
Instructions
- Cook pasta according to package directions until al dente. Drain and set aside.
- In a medium saucepan, melt butter over medium heat. Add flour and whisk for 1 minute to form a roux.
- Gradually whisk in milk and cream until smooth. Cook for 3–4 minutes until slightly thickened.
- Stir in cheddar and mozzarella cheese until melted and creamy. Season with garlic powder, paprika, salt, and pepper.
- In a large bowl, combine cooked pasta with cheese sauce and mix until well coated.
- Toss shredded chicken with BBQ sauce and layer it over the mac and cheese. Stir lightly to combine.
- Optional (Baked Version): Transfer mixture to a greased baking dish, sprinkle breadcrumbs on top, and bake at 375°F (190°C) for 15–20 minutes until golden and bubbly.
- Drizzle with extra BBQ sauce and garnish with chopped parsley before serving.
