Ingredients

  • 8 oz elbow macaroni (or any pasta of choice)
  • 2 cups cooked chicken, shredded or chopped
  • 1/2 cup BBQ sauce (plus extra for drizzling)
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups milk
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1/2 cup mozzarella cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup breadcrumbs (optional for topping)
  • 1 tbsp chopped parsley (for garnish)


Instructions

  1. Cook pasta according to package directions until al dente. Drain and set aside.
  2. In a medium saucepan, melt butter over medium heat. Add flour and whisk for 1 minute to form a roux.
  3. Gradually whisk in milk and cream until smooth. Cook for 3–4 minutes until slightly thickened.
  4. Stir in cheddar and mozzarella cheese until melted and creamy. Season with garlic powder, paprika, salt, and pepper.
  5. In a large bowl, combine cooked pasta with cheese sauce and mix until well coated.
  6. Toss shredded chicken with BBQ sauce and layer it over the mac and cheese. Stir lightly to combine.
  7. Optional (Baked Version): Transfer mixture to a greased baking dish, sprinkle breadcrumbs on top, and bake at 375°F (190°C) for 15–20 minutes until golden and bubbly.
  8. Drizzle with extra BBQ sauce and garnish with chopped parsley before serving.
