Ingredients
- 4 boneless skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- 3 cloves garlic, minced
- 6 oz feta cheese, crumbled
- 3 cups fresh spinach
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 190°C (375°F) and lightly grease a baking dish.
- Place chicken breasts in the baking dish.
- Drizzle with olive oil and season with salt, pepper, oregano, paprika, and garlic.
- Top chicken evenly with crumbled feta cheese.
- Bake uncovered for 20 minutes.
- Remove dish from oven and scatter spinach over the chicken.
- Drizzle with lemon juice.
- Return to oven and bake for another 10–15 minutes until chicken is cooked through and spinach is wilted.
- Let rest for 5 minutes before serving.
Notes
- Use chicken thighs for extra juiciness.
- Serve with rice, quinoa, or roasted vegetables.
