Description
Avocado egg rolls are crispy, golden appetizers filled with creamy avocado, cheese, and fresh herbs, served with a bold, creamy dipping sauce that brings everything together.
Ingredients
- 2 ripe avocados, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup tomatoes, diced and seeded
- 2 tablespoons fresh cilantro, chopped
- 1 tablespoon lime juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded mozzarella or pepper jack cheese
- 10–12 egg roll wrappers
- Oil for frying
- 1/2 cup sour cream (for dip)
- 2 tablespoons mayonnaise (for dip)
- 1 tablespoon lime juice (for dip)
- 1 teaspoon garlic powder (for dip)
- 1 teaspoon chipotle sauce or hot sauce (for dip)
Instructions
- In a bowl, gently mix avocados, red onion, tomatoes, cilantro, lime juice, salt, pepper, and shredded cheese.
- Place an egg roll wrapper on a flat surface with one corner facing you.
- Add 2 tablespoons of avocado filling to the center.
- Fold bottom corner over filling, fold in sides, and roll tightly; seal edge with water.
- Repeat with remaining wrappers.
- Heat oil in a deep skillet to 175°C (350°F).
- Fry egg rolls in batches for 2–3 minutes per side until golden and crispy.
- Remove and drain on paper towels.
- For the dip: whisk sour cream, mayonnaise, lime juice, garlic powder, and chipotle sauce until smooth.
- Serve egg rolls hot with the dipping sauce.
Notes
- Do not overfill egg rolls to prevent bursting.
- Air-fry at 190°C (375°F) for 8–10 minutes as an alternative.
- Serve immediately for best crispiness.
