Ingredients

  • 3 cups apples, peeled and diced
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk or buttermilk
  • 1/2 cup brown sugar (for topping)
  • 1/3 cup all-purpose flour (for topping)
  • 1/4 cup unsalted butter, melted (for topping)


Instructions

  1. Preheat the oven to 175°C (350°F) and grease a 9-inch baking pan.
  2. In a bowl, toss diced apples with cinnamon, nutmeg, and lemon juice.
  3. In another bowl, whisk flour, baking powder, baking soda, and salt.
  4. In a large bowl, cream butter and granulated sugar until light and fluffy.
  5. Beat in eggs one at a time, then add vanilla extract.
  6. Alternate adding dry ingredients and milk, mixing until just combined.
  7. Spread half of the batter into the prepared pan.
  8. Layer spiced apples evenly over the batter.
  9. Top with remaining batter.
  10. Mix brown sugar, flour, and melted butter to form a crumb topping.
  11. Sprinkle topping evenly over the cake.
  12. Bake for 45–55 minutes until golden and a toothpick comes out clean.
  13. Cool slightly before slicing and serving.
