Description

Crispy and golden zucchini fries made in the air fryer with a seasoned breadcrumb and Parmesan coating. A healthier alternative to traditional fries.


Ingredients

  • 2 medium zucchinis, cut into fry-sized sticks
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Olive oil spray
  • Optional: marinara sauce or ranch for dipping


Instructions

  1. Cut zucchini into fry-sized sticks and pat dry with paper towels.
  2. Place flour in one shallow bowl, beaten eggs in another, and a mixture of panko, Parmesan, garlic powder, paprika, salt, and pepper in a third.
  3. Dredge zucchini sticks in flour, dip in eggs, then coat with breadcrumb mixture.
  4. Arrange zucchini fries in a single layer in the air fryer basket. Spray lightly with olive oil.
  5. Air fry at 400°F (200°C) for 8-10 minutes, flipping halfway, until golden and crispy.
  6. Serve hot with marinara or ranch dipping sauce.

Notes

  • For extra crispiness, double coat zucchini by repeating egg and breadcrumb steps.
  • Do not overcrowd the air fryer; cook in batches if necessary.
  • Can substitute almond flour and pork rind crumbs for a low-carb version.
