Description
Crispy and golden zucchini fries made in the air fryer with a seasoned breadcrumb and Parmesan coating. A healthier alternative to traditional fries.
Ingredients
- 2 medium zucchinis, cut into fry-sized sticks
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Olive oil spray
- Optional: marinara sauce or ranch for dipping
Instructions
- Cut zucchini into fry-sized sticks and pat dry with paper towels.
- Place flour in one shallow bowl, beaten eggs in another, and a mixture of panko, Parmesan, garlic powder, paprika, salt, and pepper in a third.
- Dredge zucchini sticks in flour, dip in eggs, then coat with breadcrumb mixture.
- Arrange zucchini fries in a single layer in the air fryer basket. Spray lightly with olive oil.
- Air fry at 400°F (200°C) for 8-10 minutes, flipping halfway, until golden and crispy.
- Serve hot with marinara or ranch dipping sauce.
Notes
- For extra crispiness, double coat zucchini by repeating egg and breadcrumb steps.
- Do not overcrowd the air fryer; cook in batches if necessary.
- Can substitute almond flour and pork rind crumbs for a low-carb version.
